Almond SauceAlmond Sauce

Almond sauce is a variation of your traditional “Peanut Sauce”, which is best paired with fresh spring rolls and stir fry. The sauce is great for those who are on the elimination diet or those who just want to spice things up in the kitchen!

Ingredients:

  • ¼ tsp coriander
  • ½ cup almond butter
  • ½ cup coconut milk
  • 3 tsp sesame oil
  • 2 cloves of garlic – minced
  • 3 tsp lemon juice
  • 2 tbsp honey

Yield: 1 ¼ cups

Directions:

  1. Combine almond butter, coconut milk, sesame oil, lemon juice, honey, coriander and garlic in a mixing bowl.
  2. Mix or blend until smooth consistency.
  3. Chill for 15-30 minutes and serve.

Honey – Mustard Salad Dressing Recipe

This salad dressing is very easy and very tasty! There are a couple of ways of making it if you are not a fan of olive oil as an ingredient. Those variations are included next to the ingredient. This recipe could be used for such diets as the elimination diet, the Mediterranean diet, and the paleo diet; to name a few. I adapted this recipe from a recipe from “Paleo takes 5 or fewer” by Sexton.

Honey-Mustard Dressing

  • ¼ cup Extra light olive oil (or coconut milk)
  • 2 tbsp honey
  • 2 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • Salt and Pepper

Combine all ingredients, mixing well, until one cohesive combination. Chill and enjoy!

Leaky Potato Soup Recipe – Elimination Diet-Friendly

This soup is loaded with flavor and makes a great dish for the elimination diet! The following recipe makes approximately 6 servings of soup.

Ingredients:

  • 2 large leaks
  • 2 large sweet potatoes
  • 10 cups of chicken broth (preferably home-made or a chicken broth that coincides with elimination diet guidelines)
  • 3 stems of fresh cilantro
  • ½ cup coconut milk
  • 1tbsp olive oil

Directions:

  1. Heat 1 tbsp of olive oil in soup pot and add sliced leaks. Cook on medium until soft (approximately 5-10 minutes).
  2. Add in sliced sweet potatoes and cook for 2 more minutes.
  3. Add 10 cups of chicken broth, and cook over medium heat for 20 minutes. Then, slowly add ½ cup of coconut milk to mixture, whisking while doing so. Cook for 10 more minutes.
  4. Add cut cilantro and cook for 5 minutes.
  5. Remove from heat, let cool, and serve.

“Peanut Butter Cup” Chia Seed Pudding Recipe

For this recipe, one can use a different form of nut butter other than peanut butter and still get a delicious recipe. The proportions in this recipe would be enough for 1-2 servings, and this recipe is great for dessert or breakfast. Enjoy!

Ingredients:

  • ¼ cup of chia seeds
  • 1 cup of coconut milk
  • ½ tsp vanilla
  • 1tbsp cocoa powder
  • 1tbsp peanut butter or other nut butter
  • 1 tsp honey

Directions:

  1. Set aside chia seeds in a container that will fit remainder of ingredients.
  2. Combine coconut milk, cocoa powder, vanilla, peanut butter (or nut butter), and honey in a food processor.
  3. Pour mixed mixture over chia seeds, stir with spoon, and set in fridge over night or wait 4 hours before serving.
